Amarone della Valpolicella classico D.o.c.
    • Color: Lively concentrated ruby carnet
    • Very precisely defined flavour, full and well balanced
    • Rich, warm, silky texture with sensations of
      ripe fruit and hints of wild berries
    • Drying time: they are put onto wooden racks for the drying process which will last for 90 days.
    • The wine spends 36 months in traditional oak casks of 5 and 25 hl
      and undergoes a further 6 months bottle-ageing
    • Serve at room temperature, 18/20°C
    • Dry wine suitable for main red meats courses, roasts and game. It
      is an ideal wine to be savoured “in meditation”
    • Uve: 75% Corvina Veronese | 20% Corvinone | 5% Rondinella e Croatina
    • Bottle: Available in 375 ml, 750 ml, both Magnum (1.5 lt) and Jeroboam (3 lt)
    • Alcohol volume 15% vol.

Privilegia Rosso Veronese IGT
    • Color: Lively ruby carnet
    • Very intense flavour
    • A touch of warm spice with good ripe cherry flavour on the nose and palate
    • The wine matures for 24 months in small French oak barrels of
      225 lt and undergoes a further 6 months bottle-ageing
    • Serve at room
      temperature, 18/20°C
    • We suggest to match with beef, veal stew hunter’s style (with
      tomato and mushrooms), game (pheasant, boned Guinea-fowl
      stuffed with wild mushrooms) and matured cheese
    • Uve: 50% Cabernet Franc 50% Corvina Veronese, slightly dried
    • Bottle: Available 750 ml and Magnum size (1,5 lt)
    • Alcohol volume 14,5% vol.

    • The Cabernet grapes are vinified in October, then this wine has to
      referment in January with the Corvina Veronese grapes which
      were dried meantime.

recioto
Recioto della Valpolicella classico D.o.c. "Le Arele"
    • Color: Deep ruby red colour
    • Distinctive and concentrated flavour
    • At taste notes of fruit along with vanilla nuances
    • The grapes destined for Recioto are picked before the normal
      harvest when only the healthiest ones are selected. Then they are
      put onto wooden racks for the drying process which will last for 90
      days
    • This wine spends 24 months in small stainless steel tank and undergoes a further 6 months bottle-ageing
    • We suggest to serve at a temperature of 13-15°C
    • Ideal with dry biscuits, almond-paste pastries or fruit tart. To try with herb cheese or blue-cheeses
    • Uve: 70% Corvina Veronese | 25% Rondinella | 5% Molinara
    • Bottle: Available in 500 ml
    • Alcohol volume 14% vol.

ripasso
Valpolicella Classico Superiore D.o.c. "Ripasso"
    • Color: Deep ruby red
    • Soft and full fruity bouquet with cherry sensation on the nose and palate.
    • Slightly velvety, dry and bitterish
    • The wine spends 12 months in small oak barrels of 225 lt and undergoes a further 6 months bottle-ageing
    • Serve at room temperature, 18/20°C and uncork one hour before
    • Dry wine suitable for main red meats courses, charcoal grilled meats and game (boar or hare)
    • Uve: 75% Corvina Veronese | 20% Rondinella | 5% Molinara
    • Bottle: Available 750 ml and Magnum size (1,5 lt)
    • Then the wine has to referment on the Amarone’s marcs for about 8 days in conformity with the “ripasso” traditional technique
    • Alcohol volume 13,5% vol.
